I absolutely love the Vegan World Fusion Cuisine cookbook by Bo Rinaldi of the Blossoming Lotus. I am not a true vegan, but love to offer a few recipes during the week with this influence. Everything I have tried in the cookbook has been great.

I'd love to get a couple other vegan or vegetarian cookbooks and would prefer a recommendation rather than just randomly buy books.

Any suggestions?

I often refer to my copy of the Mediterranean Vegan Kitchen for simple, quick, and very filling weekday meals:

I highly recommend it!

Not a vegan, though I eat many vegan meals. I really like Myra Kornfeld's The Voluptuous Vegan. It's more of a gourmet take (she was a pastry chef [I think] at Angelica Kitchen), so it's not for quick, after-work meals. Love the orange-ginger tofu triangle (though I make them into rectangles). I also like Vegan with a Vengeance (Isa Chandra Moskowitz); I have her Veganomicon, but haven't cooked much from it.

There's another CH thread you might want to read to get some ideas as well.

Deborah Madison's Vegetarian Cooking for Everyone is a good choice, too--not vegan, but many (most?) entries are vegan (or easily veganized). It was the July Cookbook of the Month, so you might want to search for some feedback on the recipes.

EDIT: Here's a link to a recipe that I made from Voluptuous Vegan (with a few changes).
