Try the rolls at Le RendezVous in Oceanside. http://www.lerendezvousfrenchbakery.com/

I believe the owner is Laotian but French-trained. Read about him in the North County Times - he works hard to get you a consistently good product. Best baguettes - polite staff - lots of temptations. Good thing they're not right around the corner!

Major Market in Escondido makes excellent bread. The french epi will break into smaller rolls and last more than a day. I find the 'real' bahn mi rolls go bad in a day.

I'd advise to first try the bahn mi shops that also operate a bakery or store. For instance I've had banh mi at both Sorrento European Bakery and at Lucky Seafood, and at both places you can buy just the rolls. My personal preference bread-wise is Sorrento European, but filling-wise Lucky Seafood's pretty good. Both of these are on Mira Mesa Blvd., though technically not quite in North County.
