Deep Fried Sushi Rice?? Help..

I want ot recreate the Yellow Fin Tuna Tartar that I had at Redd in Yountville for my fiance's birthday tonight...but I have never tried to Deep Fry Rice to get the light and crispy texture they had. Can someone give me some advice?

What type of Rice to use?
What type of Oil to use?
Do I cook the rice first?
