What sauce to go with fried green tomatoes?

Looking for some creative suggestions for the beautiful green tomatoes I found at the market!
I feel like I need to serve some sort of a dipping sauce to go with them, but I'm not sure what.

    I would suggest either a balsamic reduction, or a remoulade. Katecm and sea97 are right on in my opinion

        I second the remoulade. I use one from Emeril, the only recipe of his I've ever gotten to work. I think it has 11 ingredients but you just chuck them all in the blender so it's very little effort.

          I also give a vote to a remoulade. Just perfect with fried green tomatoes

          I know this may not sound too special, but ranch dressing makes a good side sauce. It helps balance the bitterness of the green tomatoes.

            There are so many options, but one that I like to do is to contrast the bitter tomatoes with some nice red tomatoes, cooked up in a quick sauce with onions, garlic, etc. I also think a crumble of goat cheese and some balsmic glaze goes will. Just look for flavors that will offer a contrast to the tartness of the green tomatoes.
