Panna Cotta???

Yep, I'm on a dessert kick this weekend. I can't find my beloved panna cotta recipe, so I'm searching but again, so many recipes differ. Is buttermilk better than reg milk? Should I use heavy or light whipping cream? Honey or sugar? I think it's time to organize my favorite recipes, so I don't lose anymore. :)

i like the claudia fleming recipe, which has buttermilk, cream, vanilla bean, and sugar, best. i make it with a very dark caramel and serve it with fruit. if you don't have it or can't find it, i'll post it. it's perfect every time.

I think this recipe from Gale Gand is the best for a vanilla version.
