All the butchers around me don't carry it. Looking to make an authentic Carbonara. Anyone have any ideas?
Buon Italia, inside Chelsea Market (9th Ave, Betw. W. 15th & 16th Sts.), definitely carries guanciale. I believe Citarella also carries it.
I'm pretty sure that DiPalo has it, though they may not be convenient for you. I've only bought it on Arthur Avenue. Couldn't hurt to call Citarella, Dean & Deluca, Agata & Valentina (Valentino?) if you don't get any other suggestions.
Arthur Ave Retail Market is a good bet if you live uptown. Mike's is pretty great.
Yes - Mike's is where I buy mine, but I think it's a bit of a trek on public transportation, even from uptown.
Looks like Fairway, Todaro and Dean & Deluca, as well as Buon Italia in Chelsea Market are also good candidates. I noted in one of the threads that I'd not found it at Citarella.
Ottomanelli's has it. The trick is getting it before they sell out. Mondays are a good bet, but a phone call in advance wouldn't hurt.
