guesthouse in center of Beaune? Restaurant in Aix?

I will be spending two nights in Beaune and have gotten some great ideas for restaurants. Definitely planning on going to Ma Cuisine. Does anyone have a suggestions for a good, affordable guesthouse in the center of Beaune?

Any idea what nights Ma Cuisine is open?

I will be in Burgundy and the Vaucluse region of Provence. I've gotten some great suggestions for towns to visit. Does anyone have a restaurant or a guesthouse that would make a town worth the trip? Definitely planning on going to Sablet for Les Abeilles.

    Ma Cuisine is open 4 days a week for lunch and dinner; Monday, Tuesday, Thursday, and Friday. They are closed Wednesdays and during the weekend. Reservations are advised.

    In Beaune I have been staying at the same small hotel, 5 or 6 nights a year, for years on end. It is called "Hotel des Remparts." The couple who own it, and their staff, are very gracious. Prices are reasonable for this expensive and touristic town:

      In May we stayed at La Torse, a lovely B&B in Aix that I highly recommend. Our most delicious meal was at Les Agapes, a reasonably-priced and charming family-owned restaurant at 11 rue des Berardines. We also enjoyed Chez Feraud. Both restaurants are seemingly off the tourist map.
