Anyone know of the bakery that was opened recently by a famous Manhattan restaurant pastery chef?
I'm not sure if it's the bakery that you are referring to (my best guess is that there are more than a handful of places that meet your specs), and it's not particularly new, but
Hervé Poussot (formerly of Le Bernardin) opened Almondine on Front Street (near Main Street) in DUMBO a while back and Jacques Torres (the former pastry chef at Le Cirque and Le Cirque 2000) has a chocolate shop and bakery across the street from Almondine.
Emily Isaac from Union Square Cafe opened Trois Pommes Patisserie last year in Park Slope. Great place. I don't know if that's the place you mean.
