On the San Francisco board, we have frequent spirited discussions of our lack of good pastrami. Or is that "real" or traditional or what's the fuss about pastrami. I have searched, and tried the recommended delis and sandwich shops and taverns and what-all. I won't quit, but here's how to get a great pastrami sandwich from a James Beard American Classics award winning deli.
