I'm really not good with my knives. I'm not efficient, and I knick myself quite a bit.
Where can I take a good class in the Detroit area? Or can you recommend a book/dvd?
Schoolcraft College has a basic skills class - look under continuing ed. It's required for any of their hands-on CE cooking classes. It's taught in 2 sessions, 4 hours each. Looks like you get time with other hand tools, and basic food safety, too.
