Hash Browned Enchiladas in NM?

I went to NM a couple of years ago and had some amazing hash browned filled enchiladas covered in green chile. I am going back and wonder if anyone knows where I can find these? I cant remember the name or was a small roadside coffee shop that only stayed open until 2 pm. Thanks.

  1. What you are most likely talking about is called a breakfast burrito. It is a large flour tortilla with hash brown like potatoes inside along with egg and bacon, rolled up. It is covered with cheese, green chile sauce and then heated so the cheese melts.

    If this is what you are talking about, you can get them almost everywhere in NM. Where will you be in NM - it is a good sized state.
