pop rocks

Does anyone have any recipes or suggestions on how to find one for making pop rocks? I've heard a couple chefs around town have them as amusees or whatever but I cant find anything online and I have no idea where to even start. THANKS!

    As far as I know pop rocks are bought not made...

      To make pop rocks from scratch you'd need to keep candy syrup at the hard crack stage (~310F) while force-carbonating it. I'm envisioning a rig made from a CO2 cylinder, a Cornelius keg, and a hot plate. With a fire truck and an ambulance standing by. Sounds like a bad idea.

      I'd be willing to be that the chefs are buying unflavored "pastry rocks" and adding their own touches. Chef Rubber sells them by the kilo. http://www.shopchefrubber.com/product...

        You can buy unflavored "pastry rocks" at http://www.shopchefrubber.com/product... and play around with them. I've never tried it, so if you do, I hope you post back with results!
