Does anyone have any recipes or suggestions on how to find one for making pop rocks? I've heard a couple chefs around town have them as amusees or whatever but I cant find anything online and I have no idea where to even start. THANKS!

To make pop rocks from scratch you'd need to keep candy syrup at the hard crack stage (~310F) while force-carbonating it. I'm envisioning a rig made from a CO2 cylinder, a Cornelius keg, and a hot plate. With a fire truck and an ambulance standing by. Sounds like a bad idea.
