OK I have decided on mini cupcakes, for my dessert party, and found so many delicious recipes. Here are my options I am going to choose 2. I think the first 2 are my favorite (has anyone made lavendar cupcakes, are they yummy?)

Melt in Your Mouth Chocolate Cupcakes with Whipped Cream
Red Velvet Cupcakes with Vanilla Bean Cream Cheese Frosting
Sweet & Salty Honey Peanut Cupcakes

I would vote for one classic, the Devil's Food with Chocolate Buttercream and for one different cupcake, the Lavender pink grapefruit frosted. (what kind of cake is it?)

I love that you gave us the choice. My vote is for:

Mint cream filled cupcakes with raspberry mousse frosting AND
carrot ginger cupcakes with cream cheese frosting and candied carrot sprinkles (OR chocoalte cupcakes stuffed with strawberry chocolate ganache.. as a backup)

I did it!!! I made the Lavender filled with a Pink Grapefruit Cream Cheese frosting. My eight year old son (who is a strictly mac-n-cheeese, vanilla cupcake with chocolate icing kind of kid, sigh. . .) helped me. I knew if he helped, he would taste, and if you ever want true honesty, ask a kid. He loved them. Then I had 2 of my friends try them, again, they were a huge hit. Eventually I got my vanilla husband (wonder where the 8 year old gets it from?lol) to try one. It was definately declared a hit. The lavender was a surprise taste, but not in a bad way, just not what you might expect. It was very subtle. They also look so pretty. I dyed the whipped lavender filling purple, and the pink grapefruit frosting pink. I also got to use my brand new frostin g bag, and frosting tip. We are in cupcake heaven. I will never go back to boring bland cupcakes again. Next up, honey peanut, then onto the mint and raspberry. My kids can't wait for the carrot ones, and the husband is voting chocolate. I hope my neighbors, and friends don't mind tasting all these cupcakes for me. They are going to be busy!

So sorry. Was so busy baking, I never got back to posting. I did snag a few of these from the cupcake blog, then I just had to work with them for a week and tweak them. I ended up making lavender filled with a pink grapefruit icing, mint filled with raspberry mousse icing, and key lime macadamia nut with a cracker crust. They were a huge hit. If anyone wants recipes, I would be happy to share. Thanks for your help!!
