4 huge portabello mushrooms
4 links hot Italian sausage
1 egg
Italian bread crumbs
garlic
fresh parsley
Romano cheese (or shredded Italian cheese with Romano in it)Thoroughly clean mushrooms and place upside down on Pam-sprayed baking dish. Take hot Italian sausage and remove the casing. Mix with egg, bread crumbs, garlic, parsley and cheese. Press mixture onto mushroom. Sprinkle cheese on top.
Put under broiler until meat is done.

I usually do these with a nice lump crab stuffing. I mix the crab with some mayo, sour cream, cheddar cheese, garlic powder, fresh parsley, and roasted peppers. If it seems too runny, add some bread crumbs. Bake at 350 until browned on top. you can subtract/add whatever you like or have on hand. It is a very forgiving recipe.
