Stuffed Portobellos

Starting a new thread-does anyone have any good recipes for these mushroom gems? I've got a jar of roasted peppers and some pesto, but that's not "stuffing"....Anyone???

    4 huge portabello mushrooms
    4 links hot Italian sausage
    1 egg
    Italian bread crumbs
    garlic
    fresh parsley
    Romano cheese (or shredded Italian cheese with Romano in it)

    Thoroughly clean mushrooms and place upside down on Pam-sprayed baking dish. Take hot Italian sausage and remove the casing. Mix with egg, bread crumbs, garlic, parsley and cheese. Press mixture onto mushroom. Sprinkle cheese on top.

    Put under broiler until meat is done.

      I mix together cooked brown rice with sauteed onions, garlic, tomatoes, zucchini, any other vegetables I have in the house. I bake until hot and the last few minutes, I top with goat or feta cheese. So good.

        I usually do these with a nice lump crab stuffing. I mix the crab with some mayo, sour cream, cheddar cheese, garlic powder, fresh parsley, and roasted peppers. If it seems too runny, add some bread crumbs. Bake at 350 until browned on top. you can subtract/add whatever you like or have on hand. It is a very forgiving recipe.

          I forgot, add cream cheese, too. Totally not good for you, but oh so delicious!

          add your pesto and red peppers to the mushrooms and top with goat cheese then run it under the broiler. s & p on the caps too of course
