I make them myself at home once a month. The bison meat is really easy to fine. They have it everywhere from BJ's to Super Target.

We were just in Montana and I thought those bison hunting licenses were pretty tough to come by - though bison burgers abound. Funny, we'd ask the wranglers at our ranch what they eat and the answer was invariably "elk." They'd each shoot one and then live off it the rest of the year.
My Publix sometimes carries ground bison meat from Maverick Ranch which makes a good burger.
