Healthy recipes that are good for entertaining?
I'm having house guests over, who are dieting. What are some nice things I could make for them?
If you have a grill, you can grill whatever veggies you like and toss with a little olive oil, basil and splash of balsamic vinegar; grilled corn on the cob brushed with olive oil and s & p; grilled fish (catfish, mahi mahi) or shellfish (scallops or shrimp) rubbed with a mild bbq rub and served with a yellow pepper cilantro pesto. If you cannot grill, roast veggies; pan sear scallops in a touch of butter and olive oil; If nothing above appeals to you, chicken picatta is pretty light.
