when roasting ribs in the oven - which side do you face up?

and at what temperature? and for how long?

    Meat side up, 350 degrees, the cooking time depends on too many factors to nail down a specific period. They're done when the meat moves easily off the bone.

      Meat/fat side up.

      You want the side with the most fat on top so as it melts, it melts through the meat, thus basting it.
