CUT seems to have quickly risen into the elite class for steakhouses. I've had an excellent experience there and it has gotten mostly good reviews by the Chowhounds.
My experience at Trotter's was fantastic. We did the 14-courses at Bar Charlie however. Can't comment on the regular menu. I highly recommend Bar Charlie.
I'm dying to do the Prestige Menu at GS. Let us know how your experience at GS goes.
Thus far in my Vegas dining career, my best experience has been at Alex. The food, service, ambiance and entire experience has been 5-star on 4 occasions for me now. The tasting menu and wine pairings are the way to go there. Way spendy but well worth the cost. Actually, it is less spendy than GS.
I like Mesa Grill for casual dinners and lunches. I also enjoy Enoteca San Marco for the same. Both are good showcases for their respective celeb chefs, Flay and Batali.
For bistro-type meals, I prefer Daniel Bouloud to Bouchon. For breakfast, Tableau and Verrandah are my favorites. I've had erratic experiences at Bouchon for breakfast, but many Chowhounds swear by it.
