        <content>I have a great, easy filling for apricot pie:  Apricots, corn starch, sugar.  Do you think I can use just corn starch and sugar with the same success for a peach pie?  Or, what do you suggest?  I like to keep the filling as few ingredients as possible.  thanks.</content>

      <content>apricots tend to get much tarter when cooked, so you might want to cut down the amount of sugar. I don't think peaches will need as much sweetening. </content>

      <content>I would use the same amount and add a little splash of lemon or peach schnapps.
Peach pie should be sweet.- I'm so jealous....</content>
