Peach Pie Filling

I have a great, easy filling for apricot pie: Apricots, corn starch, sugar. Do you think I can use just corn starch and sugar with the same success for a peach pie? Or, what do you suggest? I like to keep the filling as few ingredients as possible. thanks.

  1. apricots tend to get much tarter when cooked, so you might want to cut down the amount of sugar. I don't think peaches will need as much sweetening.

    1. I would use the same amount and add a little splash of lemon or peach schnapps.
      Peach pie should be sweet.- I'm so jealous....
