Caribbean-inspired appetizer

I need to come up with a Caribbean-inspired appetizer for an upcoming party and can't think of anything more interesting than a fruity salsa. Any suggestions? Something that can be made at the last minute is preferable.

      Not necessarily last minute stuff, but:phulourie served with mango chutney; potato balls; corn fritters; cheese straws; fried plantain; garlic pork.

          This is just a thought: I stumbled across Goya's website the other day (as in the latin product brand) and looked at their recipe section. They seemed to have lots of user friendly recipes including many Caribbean inspired ones. It might be worth a shot to take a look!
