A first for me last night at Ushi Wakamaru. Wrapped in shiso so uni doesn't get entirely fried. Very delicate and oishi.

Quite a few places served uni tempura - Soto, Inagiku, Hasaki, and even Nobu and Morimoto.

Wrapping it in shiso is the most common way of doing it.

Hadn't seen it before. In retrospect, probably not the best use of uni.

Well, it is just a different way to experience uni. The uni becomes lukewarm and melty. For me personally I won't use a super duper fresh sweet uni for tempura.

Also, in Japan, tempura is served in tempura specialty reaturants, so you are not going to get uni tempura at a sushi place (well, actually nowadays I am not so sure....).

Well, there are people who liked shave foie gras (at Momofuku Ko) and people who don't. Different people, different strokes.

Again, I am just saying it is a different way, not a better way.
