How long will my fruit infused vodka keep?
I'm just starting to infuse vodka with various fruits, and I can see how this process becomes rather addictive. Will my tayberry and marionberry vodkas still be potent and fruity during the holidays? Do some infusions peak faster than others? I'd love to hear from those of you who are old hands at this.
I misplaced, then found some raspberry infused vodka that I made the summer before last and it still tasted fine.It was in a cool mostly dark basement the whole time so that might have had something to do with it. I use no sugar, just fresh berries, a split vanilla bean and vodka. I have noticed that my pineapple infused loses some of its brightness after 6 months, if there's any left then. the peach seems to stay fresh tasting and the ginger cardamom has been fine for a year.
