Thanks everyone. I ended up doing a quick blanch, followed by a quick saute with EVOO, ginger, garlic, salt. YUM

I absolutely love them raw in salads or as a snack at work.

I recently shelled a bunch, mashed them with a mortar and pestle along with mint, salt, lemon juice and olive oil. Serve on bruschetta rubbed with garlic, topped with ricotta.

Quick saute in a hot pan with sesame oil. Finish with a shake of soy sauce and a sprinkle of sesame seeds.

Make rice in rice cooker. When rice is done, drop in the snap peas.

You'll get delicious crunchy, yet tender peas, plus sweet lightly seasoned rice that taste and smell like an early summer evening.

Water, shiro miso, dried wheat noodles, snap peas. Boil. Pour over shell-on shrimp. Let sit for a few minutes. Add chopped green onion tops and chili paste to taste and stir in. Rub chopsticks. Slurp and burp.

blanched, then sauteed super-quick with olive oil & mint (or whatever else)
