WAY too much Dover Sole--recipes?
I bought a roughly 4 lb. package of Dover Sole fillets from Costco a little bit ago, which translates into probably close to 20 fillets. Normally, I separate a package like that into several sandwich bags with 2 or three in each and freeze, but feeling clever this time and out of small bags, I wrapped each fillet in waxed paper and put them all in the freezer in one big bag, thinking I could then pull each one out as needed. It didn't work. It wasn't really waxed paper, it was pastry sheets, and now it's a giant frozen clump of fish and paper that I'm going to have to completely defrost in order to separate. What can I make? We're having another couple over for dinner tomorrow night, but I don't think the 4 of us can eat all that fish, so whatever I make it needs to be 1) tasty enough to serve at a dinner party 2) something that keeps well enough that leftovers will be good for the next couple of days for my husband and I to finish off. Any ideas?
