        <content>I want to try baking the pandan chiffon which requires Ovalette or Quick 75 and Hoen Kwe Flour (green bean flour which is pre-mixed pudding flour). Anybody knows where I can buy them in Vancouver? I need to search the asian grocery stores but I am not sure which part of the city (Vancouver, Burnaby etc) has a large dense of asian (flillipino, indonesian, vietnamese etc) grocery stores. Appreciate any help on this. Thanks.

      <content>Lots of Vietnamese on Kingsway-I often see small Pilipino places while driving around the city but they are quite scattered about maybe Fraser around 25th.</content>

      <content>I've bought Pandan Chiffon cake at T&amp;T before. It was pretty good.

If you're ever in Surrey, Hen Long (144th and 104th) is your best bet. I once asked for Rau Rum, and they asked me back "you mean laksa leaves?".</content>

      <content>I would try T&amp;T. As Sam states above - there are a few Filipino places around Fraser (but closer to 33rd). Also a few along Main and 12th-ish (by the Catholic Church there). </content>

T&amp;T has a South East Asian aisle but it's too general. They don't have the Koepu-koepu Pandan Paste which you can find at grocery stores.

      <content>It's from dianasdessert.com and from EG Gullet (from google results). There are two recipes there. I tried one this afternoon (she said ovalette is optional) but my cake crumble when cooling. It could be my folding but I feel that the whisked egg whites although whisked to stiff peak, wasn't holding enough with the cream of tartar. Hence, I am looking for the Ovalette to see if it will be better. I wish I could I ask my mom to send it over from Malaysia but with the cost of shipping, it's not worth it. I want to try the pandan custard filing but that needs the HK Flour.</content>

      <content>Ovalett is an industrial grade cake emulsifier made by the Bakels group - it is normally used in bulk cake production. You could try a bakery supplies outlet like Snowcap, Dawn Foods or Bakemark - all of whom have warehouses in the Vancouver area. 

A cake batter is basically an emulsion, whereby you whip air into a liquid mass - the emulsifiers in Ovalett - usually chemical emulsifiers like mono &amp; di-glycerides, polyglycerol esters of fatty acids etc will help to retain the finely dispersed air bubbles within the emulsion &amp; hence once baked give you that fine texture.

      <content>Thans Graemejw. It seems like Bakels have it in their catalog but not Snowcap, Dawn Foods or Bakemark. The distributor for Bakels in Canada is Qzina but I can't find Ovalette in their product catalog either.</content>

I would fire them off a quick e-mail - Ovalett is a famous Bakels product &amp; I am sure someone there would know it. Alternatively Danisco manufacture a direct copy and would be able to help I'm sure.

      <content>I wrote to Qzina in Richmond, saying I am not a commercial baker and I just need a small packet of Ovalette. Do they have it in their warehouse. Qzina's Op Manager replied saying they have it in their Los Angeles warehouse. It's a 10lb bucket with UPS charge about $60 shipped to me. :)  Time to look around town again. </content>

      <content>A friend brought me a ready packet of flour for pandan chiffon from Singaopre once. All I had to do was add 10 - 12 eggs to it. It was easy and "fluffy". Only problem was the pandan tasted very "fake". 

You may want to ask your mom to look around for these packets instead.</content>
