I like the egg salad tea sandwiches at Urban Tea Loft in downtown Chandler. Plus you can eat them with a tea-tini!
However, I would like to mention that egg salad is probably one of the easiest things (for me, anyway) to make yourself. Might want to look up some recipes and take a stab. That way you can adjust the mayo-mustard ratio to your liking, add favorite herbs, etc.

Matt's Big Breakfast in downtown Phoenix. I have nothing to compare it with as this was the first egg salad sandwich I ever tasted. It was however, delicious.

I just had the Sacks Dali for lunch. I like it, but, I'm not much of a sandwich person.

Big City Bagels, at Hayden and Frank Lloyd Wright, also had a good egg salad sandwich, although not as good as their whitefish.

AZ Bread company on Shea and Scottsdale Rd make a great Egg Salad Sandwich. I love it on their olive bread w/ sprouts...kinda has that salty sweet thing going on. The sandwiches are big enough to share. I also like the egg salad at Lox, Stock and Bagel at McCormack Ranch
