        <content>I'm looking for recipes for really low-fat homemade ice cream for a very diet conscious crowd. I have a recipe from Epicurious for cream cheese ice cream where I can use low-fat cream cheese, and skim milk but I'm afraid if I sub evaporated milk or fat-free half and half for the heavy cream it may not actually have the consistency of ice cream. Any ideas, recipes, or tips you can share? Oh, and the other part of the challenge is I don't want to use eggs or have to cook the concoction first. Thanks!</content>

      <content>If frozen yogurt is an option, I made some yesterday following David Leibovitz's recipe and it was really really good not to mention fat free. It'd be realy great with fresh berries.</content>

      <content>Check out Bittman from the NY Times... last summer he ran a recipe for cornstarch ice cream.  It works great; the cornstarch acts as a thickener, making the ice cream creamier  without all the yolks.  This helps the cholesterol problem; the calorie problem I don't know... eat less exercise more?  When I made it  I liked it better with less of the cornstarch than he uses.</content>
