What do you do with left over rice? I usually make black beans and rice or fried rice. Any other ways to use it? Thank you!

It mostly depends on how much is left over. If it's just a cup or so I'll throw it into a mixed tossed salad, add it to a stir-fry, to soup, or the Italian dish: Rice and peas. If there's more than that it can be used for rice pudding.

I think it's nice in a cold rice salad, with tomatoes, chickpeas, cucumbers, maybe some olives, a vinaigrette, maybe some feta? I usually throw in whatever I have, but you do want to make sure that the basmati flavor works with what you're adding it to.
