Chicago for Labor Day Weekend

We are going to Chicago for Labor Day, sans kids. Looking for 3 restaurants, good vibe/energy, great food, real taste of Chicago. We love great architecture and indoor/outdoor cafes. It is our first time to the city for fun, although we have each been there for businesss before many years ago. Anything will work, Italian, Pan-Asian, American, Seafood. We love it all but we are a bit spoiled hailing from NYC. Suggestions?
