Tiny whole chicken (1.3 lbs) questions

efdee Jul 20, 2008 08:15 AM

I just bought a whole chicken at the Greenmarket that only weighs 1.3 lbs. That will only feed one person, won't it? Can I just cut normal roasting time in half for that size bird? Is there a better way than roasting to prepare such a small chicken? TIA

Whether it will feed one or two people depends upon what else you are serving with it.

You could cut it in half and pan roast it on top the stove, or in the oven. My favorite
Spanish restaurant takes a chicken like that and cuts it into 8 pieces with a cleaver, and sautés it with garlic and white wine and serves it atop saffron rice. Easily serves two and is SO delicious!

It not only sounds delicious and more interesting than roasting, but I won't have to blast the oven on such a hot day. Thanks for the excellent suggestion.
