Recipes with & without veggies
My friend's husband refuses to eat vegetables. She's looking to lose about 20 pounds and is really struggling to make healthy foods that both of them will eat.
She asked me for healthy meal suggestions where she could prepare one dish and add vegetables to her half. My main thought is stir-fries and maybe omelets.
Do you have any ideas? In addition to not like vegetables, he doesn't like many ethnic foods - or at least in any preparation other than Americanized versions.

My husband does not eat a lot of vegetables and while sometimes it is annoying, he is not a total pain about it. He eats corn, broccoli and carrots (if the carrots are not cooked).
I will make things like fajitas with chicken and he will eat the chicken and I eat the peppers, onions and a bit of chicken. I will often throw in some other vegetables too.
Or, as you said, various stir-fries. I eat the vegetables and protein, he eats the protein. He loves pasta but I have been trying to cut back on the pasta. So I will make grilled shrimp and grilled vegetables (usually zucchini or asparagus) and make him some pasta. Since it is summer, we have been eating a lot of grilled corn. I figure at least it's some kind of vegetable for him, and better than none at all.
Last night we had grilled burgers and a baked potato for him, grilled asparagus for me. It just takes a little planning.

That's a tough one. My first thought(aside from OMG whatta ___ he is! )she needs to make sure her portion isn't as big as his...it's easy to just "split it" when cooking for two... a mistake I made in the first few years that caused me to gain 30+lbs.
If her husband is anything like mine used to be, he preferred his veggies to be: potatoes, corn or iceburg lettuce ....or starch, starch and water. Thankfully DH's doc read him the riot act about 2yrs ago and he now eats more veg than ever. One easy way to get more veggies into a meal is just by eating them raw, and a lot require no prep(which is nice when your friend has to do extra cooking already to satisfy his limited diet) baby carrots, cherry/grape tomatoes, sugar snap peas usually just need a quick rinse and they're ready to go.
Sorry, that doesn't really answer the question of what to add veggies to.... I guess aside from the omlets and stir fries, pasta sauces and soups are all I can think of...
