Head to "Fish" Rue de Seine, they have a good mixed (it isn't a fish restaurant) menu including labeled vegitarian options. It is wine bar with a good restaurant, you do need to book as they fill up every day they are open.

Lots of places will have salad and vegtable options but you do need to take care as they may contain meat or have meat stock bases.

Paris is not a great place for vegetarians, so a restaurant like Fish that has (true) vegetarian options is quite rare and thus can be considered one of the better options for a vegetarian. Another good choice is "Maceo" just over the Seine in the 1eme they do a good vegetarian menu at €30.

Obviously a lot of restaurants, including starred ones, have dishes that consist of vegetables, however many of these dishes can have fish or chicken stock bases. I am certain on most menus there will be one or two dishes suitable for vegetarian, but I recommended Fish because they call them out, and they have an English chef who appreciates what it means to be a vegetarian. If it isn't up-market enough for you then try Maceo.

If you really want top end (in the 7eme) try L'Arpege, Alain Passard cooks outstanding vegetable dishes. It isn't cheap, but it is reputedly the greatest vegetable based food in the world.
