i bought some live scallops yesterday - how to store them?
i bought some live scallops yesterday and they were sold in a bag of water. now they have opened up and i'm planning on cooking them tonight, but should i just shuck and drain them or can i keep them like that until evening? i was going to cook them last night but some unexpected events occurred...

I would drain and shuck them and cook them as soon as possible. Before you do that, tap each open one on the side of the counter. If it's still alive it should close. If it doesn't it's not alive anymore. I'd be wary about eating those that don't close. That being said, I've never worked with live scallops, but that's the test I use for clams, mussels and oysters. I do the opposite after cooking: any clams, mussels or oysters that haven't opened during cooking get tossed.
