Recipe Testing for Publications
Does anyone test recipes for magazines, etc? I test recipes for Cooks Illustrated as well as Leite's Culinaria and really enjoy it. It's fun knowing that you cannot say anything about those recipes until they are published several months later (sort of makes you feel all sly and sneaky!).

How interesting! I had not read those threads prior to posting. I've only been testing for CI for two years and test about 75% of the recipes. Some good, some make you go hmmmm...
Funny thing is, I do not even subscribe to CI - just interested in testing. Sometimes my kitchen is a science lab so I love to do that kind of thing. I am very interested in the hows and whys of things working (i.e. how baking powder actually makes things rise, the effects of sugar and yeast, etc.). In many ways I have a scientific mind (although I failed Organic Chemistry in my first year of university many years ago!).
