Yeah... It's a protein thing---- usually...
I give it a quick rinse, pat dry, get some salt on it, and toss it on the heat...
As long as it smells decent it'll be good...
I even prefer the wet aged beef that I buy in the vac sealed bags (usually Skirt) when it begins to smell 'just a touch' gamey...
It enhances the beef flavor to me...
