I do agree - their souffles are excellent. However, I think the restaurant is overrated as every dish I've had has been mediocre and bland (and I've given the restaurant multiple tries). I was hoping to find that quality of souffle elsewhere in DC or NOVA where I could enjoy an outstanding meal along with it.

http://www.chowhound.com/topics/462985 is a post of mine from last Thanksgiving at L'Auberge. That day the souffle matched the meal although typically it is exemplery.

I'm no expert on souffles but I know Mortons offers several different ones including Grand Marniers'. I've had it and enjoyed it but as I said, I'm no expert.
