        <content>My husband has been dogging me to find out if it's possible to buy fromage blanc somewhere in Montreal.  I am not quite sure what this is, as I have never experienced it - but from doing research (okay, googling and reading other boards on Chow) it a smooth white cheese, not cream cheese, not cottage cheese (not the grainy one or the smooth kosher one), not baker's cheese...  So help me guys and gals...  What is it and can I get some in our fair city where everything is possible?  </content>

      <content>Fromage blanc a.k.a. fromage frais a.k.a. quark can be found in the dairy section of most supermarkets. Usually near the sour cream and the cottage cheese. Damafro makes one from skim milk, but the Libert&#233; cheese is much more like the ones I've had in France. It's fattier so it has a more pleasant texture.</content>

      <content>Libert&#233;'s "traditional cottage cheese" (described in the link in your first post) is also very similar to quark. This is not  curds and whey (a.k.a. "creamy cottage cheese"): it looks much like their quark, and the texture is also similar. It's been a while since I had either, so I won't try to describe the flavours. Both were very good.

I also recall seeing a goat version (possibly marked simply "fromage frais" -- no quark, no cottage --  but can't find it on the website and never tried it because it was very fatty (around 8% IIRC). </content>

      <content>Ch&#232;vrerie du Buckland's (the stand at JTM) fresh cheese is -I think- made from  goats  milk, if that makes any difference for the hubby. I saw the guy selling some a couple of weeks ago, but I didn't get any because I had too many eating plans and I didn't want it to get it unfresh on me. Bummer, this weekend he didn't look like he had any (and hence perhaps you didn't notice it); so it might be an on and off thing. </content>

      <content>My Swiss wife gets quark cravings and she gives the thumbs up to the Fromage frais (I think it's called Avalanche) that you can find in the fridge at Qui Lait Cru at the Jean-Talon market. They also sell another Quebec-made quark that is made with goats milk and comes in a few interesting flavours.</content>

      <content>So, I got him some Goat's fromage frais - high in fat content, and salt according to him - not so good - even though he loves goat's milk products.  The Liberty Quark hit a home run, but I could only find the very low fat one 0.5 or something. Is there a higher fat one?

      <content>Try the regular non-quark fromage frais in the container with a red-brown label. 4% MF, if I recall correctly.
