i want to like lentils.....

but nothing has sent me over the moon. to me, they taste vaguely like how i imagine dirt might taste. but, i just found this sprouted red lentil summer salad with spicy vinaigrette that looked good:

what recipe of yours will make me change my mind?

  1. I am not a huge lentil fan myself, but this epicurious recipe is really good. I think the coconut milk and curry are really good with the lentils. I used green curry paste when I made this, and skipped the zucchini.

    1. For me, puy lentils or castelluccio lentils are by far the best, with a nutty texture. I often make lentil salads with them for lunch - I particularly like one with feta, spring onions and sun-blushed tomatoes. Roasted squash/pumpkin also goes well with this type of lentil.

      1. Almost forgot, this weird and wonderful Red Lentil and scallop soup recipe...Sometimes I leave out the scallops, and eat it on it's own...

        1. I make this Ina Garten recipe a lot - and use French lentils as recommended in the recipe. I think the sauce is great and always add more red vinegar because the tang is so nice to have. She pairs it with salmon but very often I just make the lentils by themselves - they are great for easy lunches during the week. Mostly I eat it as is, though topped with some crumbled feta is really good.
