Charity Bike Ride would like recommendations

Hi a charity bike ride will be starting in Rutland VT on Saturday (July 12) and making stops for the evening in (New York) Glens Falls, Johnstown, Hamilton, and Binghamton and then on to Clarks Sumit and Stroudsburg PA.
Any suggestions for good eats (casual attire) breakfast, dinner, or ice cream would be most appreciated.
