I've read so many positive reviews of Mark's in Houston that my friends and I have decided to go there for a weekday birthday luncheon.
I saw a "sample menu" on their website. Does their menu change daily/often?
I would love to read some recommendations of "must tries" or some things that have disappointed.
As Mark Cox favors fresh ingredients it would behoove you to sample a daily special. If they have soft shell crab, he does it quite simply (fried) toppped with jumbo lump crab meat and a citrus beurre blanc. Fresh King crab is quite a rariety in Houston and when he has them he usually cooks them in the wood burning oven with just a smattering of spice. When you here the phrase "A Study of....." , jump on it. Uusually lamb (Jameson Farms Lamb!) or Kobe beef, and he usually has 3 different preparations on the same plate. Trust your instincts and the wait staff. They are quite well educated so don't hesitate to inquire about the menu. Finally, I highly recommend the raspberry tart. They have a new pastry chef and she has recontextualized several old favorites.
I'm probably not the best to ask as I only get to eat there when I'm in Houston, but my impression is that the menu changes quite often to take into account seasonal ingredients, etc. I know that I've dined on consecutive nights and there will be some differences in the menu, although there is also some overlap.
