Pls critique this 5 Bean Salad recipe...

I am going to try to re-create a bean salad that I've always enjoyed from my favorite produce mart. I tried finding a similar recipe online, but everything was more complicated. I've never made a bean salad before and was wondering if anyone had any suggestions about method, quantities, additional or subtracting ingredients. Here goes:

5 BEAN SALAD

Combine:

kidney beans
garbanzo beans
green beans
cannellini beans
and black beans (i have forgotten the last one - think it's black)
red + green bell peppers
red onion
cilantro
vinegar (apple cider probably but i'm going to use red wine)
tiny bit of mustard (i think they listed that in the ingredients)
and a little bit of mayo (i will use soy mayo).

I don't live in the same town as the produce mart anymore, otherwise I'd go check out their ingredient list again. Any thoughts ??

      Sounds good. I would probably skip the mayo myself, but that's just me.

    2. I'm seeing fresh lime juice instead of vinegar...and olive oil instead of mayo...that's just me...anyone else? Of course, I don't know what you are trying to re-create...are you sure there's mayo in the store salad?

      1. for a trad 3-bean salad flavor, i'd add sugar. no mayo.

        and i love black beans, but not in this salad. doesn't look good.

        2. I would second Val's suggestions of olive oil instead of mayo, but I'd keep the vinegar--red wine or apple cider should work (not white vinegar!) I am personally a fan of the unfiltered apple cider vinegar myself.

              hmmmm thanks for the tips.

              there is definitely mayo in that salad, but i think just the tiniest bit - it was listed on the ingredients, and there was always a little bit of whitish liquid at the bottom.

              guess i'm just going to try it out - will omit the black beans. i'll let you know how it goes!!
