re: Mr Taster
Aw, come on. Tito's guac.... (um, I really don't think it can be called guacamole) is pretty thin stuff, but thou dost exaggerate a bit.
They serve a similar style avocado-based sauce at Taco Mesa (in the OC). I don't understand it personally, but thought it must have some basis in use somewhere in Mexico????

This will probably be moved to the "home cooking" board -- by the way, there are a couple of threads over there about trying to figure out Tito's red salsa recipe:

IIRC, their guacamole is more of an avocado sauce than a true "guacamole." Don't know about the ground peas, but I would expect it is thinned with something.

What you want to look for is recipes for "avocado salsa" -- here's one which sounds tasty:
Avocado Salsa
2 medium avocados, pitted and peeled
3 serrano chiles, stems and seeds removed, chopped
1/4 cup chopped onion
2 tablespoons lime juice, fresh preferred
Salt to taste
Chopped fresh cilanto
Put all the ingredients, except the cilantro, into a blender or food processor and puree until smooth.
Pour the mixture into a bowl, garnish with the cilantro and serve.
Yield: 2 cups
It's from the following website:
