Need a No fail Peanut Butter Cookie Recipe

Mr Shallots likes to make peanut butter cookies.
Some of the recipes he's tried have not been successful, even if he had remembered to add salt and baking soda.
Can someone share a great recipe, you know, one that will try my willpower everytime I walk past the cookie jar?

  1. Here is a perfect basic recipe.

    Peanut Butter Cookie Dough

    1/2 cup butter
    1/2 cup peanut butter (JIF!)
    1/2 cup granulated sugar
    1/2 cup packed light brown sugar
    1/2 teaspoon baking soda
    1/2 teaspoon baking powder
    1/2 teaspoon kosher salt or 1/4 teaspoon table salt
    1 egg
    1/2 teaspoon vanilla
    1 1/4 cups all-purpose flour

    1. In a large mixing bowl beat the butter and peanut butter with an electric mixer on medium to high speed for 30 seconds. Add the granulated sugar, brown sugar, baking soda, baking powder, and salt. Beat until combined, scraping sides of bowl occasionally. Beat in the egg and vanilla until combined. Beat in the flour on low speed. Form dough into a log, wrap in waxed paper. Refrigerate for 2-3 hours.

    2. For this amount of dough use half the filling/cinnamon sugar listed in the above link. Follow the directions listed for forming and baking the cookies.

    1. Here's our favorite. As I recall, the original source was the "Cotton Country Cookbook" from the 70s. I adjusted it for use in a restaurant, and then scaled it down again, below, for home use. You need to use regular grocery store peanut butter for this, not the all-natural, nothing added kind.

      Crispy Peanut Butter Cookies
      1 1/2 doz. large cookies

      Dark brown sugar ½ cup
      White sugar ½ cup
      Unsalted Butter ¼ pound
      Eggs 1
      Crunchy peanut butter 1 cup
      Salt ½ tsp.
      Baking soda ½ tsp.
      Flour 1 ½ cups
      Vanilla ½ tsp.

      Cream sugars and butter. Beat in egg, peanut butter, and vanilla.
      Sift dry ingredients together. Blend into peanut butter mixture.
      Use medium scoop. Flatten each ball on baking sheet with tines of fork. Sprinkle with coarse sugar.
      Bake at 350 for 16 minutes.
