Girl Scout Thin Mint Ice Cream Pie--A Success!
My parents drove out here to visit me for a few days and I made sure that my dad (who has a sweet tooth) would have a suitable dessert waiting for him. So, I made a Mint Cookie Ice Cream Pie with Homemade Mint Cookie Ice Cream. His favorite Girl Scout cookies are Thin Mints and I happened to have three boxes of them (unopened, I might add!--just want to help out the Girl Scouts!) Anyway, I made a layered ice cream pie with homemade Mint Cookie ice cream (basically a mint choc chip ice cream, with broken bits of Thin Mint cookies replacing the chocolate chips). I used a prepared Oreo crust, layered the bottom with a chocolate sauce I made (using choc chips, butter, whipping cream, corn syrup, and vanilla extract). Put the crust in the freezer to harden it up a bit, then topped it with a pint of freshly churned mint cookie ice cream, back in the freezer, take it out again, layer with more chocolate sauce AND pieces of Thin Mint cookies, in the freezer to harden up, out again, top with another pint of the mint cookie ice cream and decorated the top with some Thin Mint cookies. Dad loved it, it looked wonderful, it tasted fabulous and the Thin Mint Ice Cream Pie means that nofunlatte is not thin like the cookies! The folks left today, so it's back to running tomorrow.
