Ok, I bought parm at Costco...now what? [moved from Quebec board]
Just got back from Montreal and we did go to Costco for that HUGE hunk of parmesiano reggiano. Pretty good price compared to New Jersey. But, I would never buy a huge size like that. How long will it keep and once I open it, how best to store it? I do store my grated parm in the freezer in ziploc bags. Can I do that? Or, do I just loosely cover it (no plastic bags) and keep it, shave off any mold as it gets older?
I'd appreciate your tips and advice. Thanks!
JSYK, this thread is going to get moved to another board, since it's OT.
I wrap mine in wax paper or foil and then keep it in a freezer bag. It lasts for months in the fridge, though it does lose a bit of its flavor and moisture content over time.

It's a good nibbling cheese, not just for grating.
We went to a cocktail party at the Italian Embassy a few years ago and at one of the dining room table there was a huge wheel of Parm. There was a chef in whites with a tool of some kind chipping off small chunks for the guests. He was one of the most popular men in the room - right up there with the bartenders.
I've always buy Parm in big hunks so we can eat it ever since then. I put it on cheese trays all the time now with a special tool I found for it in Italy.

MakingSense -- I'm sorry if my post read as though I only eat grated parm. I have been eating parm by the chunks since I was in my teens!!! It is our favorite cheese and we buy it all the time. It's just that this "chunk" is a whopping 2 pounds and I want to make sure I get to eat every ounce of it!
So, my post actually was: Any suggestions on storing it properly??

I'm with afoodyear: I have a diminishing block (it started at 2 kg) from Italy kept these last three years in waxed paper (changed with each use) and freezer bags.

Thanks! That's exactly how I've been doing it these last couple of years, but never bought anything as big as this before. I usually buy a smaller piece, then when finished, buy another.
I'll just keep on doing what I've been doing, then...if yours lasted 3 years, that's great!
