Thyme Sorbet - Help!!!!!

I had a life-altering thyme sorbet at Tom Coliccio's Craft restaurant in LA a few months back. I've been scouring the interweb for a recipe ever since and, honest-to-Google, I just can't find a recipe anywhere. There are some for lemon thyme sorbet, but none that are just straight thyme.

Can anyone help? I'm dying to repeat the experience for my lovely girlfriend, who couldn't join me for the trip

      Thyme Sorbet (4-6servings)


      500ml / 18 fl oz water

      150g / 5oz sugar

      4 small sprigs fresh thyme in flower

      Preparation Method for Thyme Sorbet Recipe

      Boiled together the water and sugar until a reasonably thick syrup is reached - this will take about 15 minutes.

      Remove from the heat and add spring of thyme. Remove the thyme from the syrup after 2 minutes and drain the syrup through a very fine sieve.

      Pour the syrup into an ice cream maker and set in motion

      When the sorbet has crystallized spoon into a container and keep in the freezer until needed.

      If an ice cream maker is not available, part freeze the mixture in a shallow container, break up gentle with a fork and then pour into a covered container and freezer until needed.
