        <content>Vegetarian, low-fat, fairly fast -- I am jonesing for potatoes, spinach, lemon lemon lemon to make it bright on this warm grey thundery evening -- composed salad? something roasted? Let me know what comes to mind! Thanks.</content>

      <content>are you ovolacto veggie?  how about a layered strata or frittata... in a baking dish, ,layer sliced potatoes, then spinach then onions (pre-sauteed w/ some garlic and lemon juice if you like), then jarlsberg or provolone or mozzarella or a combo.  repeat layers, then pour over eggs beaten with a little milk and parsley or tarragon.  sprinkle top with more cheese and bake.</content>
