<content>My spearmint plant is getting out of control and I want to use some of it up. My first thought was a Thai chicken dish that I have made several time or a "greek" meatball with lamb, mint, oregano, and red onion on a pita. However, I have made both of these several times and am looking for something new.

Anyone have suggestions?
