        <content>Hey Hounds.

I'm firing up the smoker for some salmon tomorrow and I noticed in my freezer that I have a flank steak. It's been there for a while and I figure I need to use it up.

Has anyone ever smoked a flank steak and if so, how did it turn out. I'm seriously considering layering some bacon on top to add fat to keep it moist.

Any and all suggestions would be appreciated.

      <content>Yep, you can smoke it, just keep the heat low (like 225) and slow and turn it only once.  Be careful because it can turn into jerky pretty quickly.  I generally use a rub but a marinade should also work fine.
I don't think I'd use bacon because I want the finished product to offer a flavor of well smoked beet, not bacon.

I smoked it for about 5 hours. It seemed a bit dry but I had to go out for a couple of hours and it maybe could've come off a half hour earlier. Maybe not though. It was not juicy but it wasn't dry. Certainly not jerky.

Anyhoooooo......
I sliced it up nice and thin on the bias. Mixed some taco seasoning in with salsa for a sauce. Had some lettuce and shredded some old white cheddar. Wrap all that up in a home made (and still warm) tortilla and you have your self some damned good eats.

      <content>I just did another Flank Steak on the grill today, I'm loving this cut.  This time I marinaded overnight in low sodium soy sauce, ketchup and some Harry &amp; David's hot smokey relish - yumm!!!!  Fantastic flavor.</content>

      <content>Just to let you know, I marinated and grilled a grass-fed New Zealand cut from Trader Joe's and it was almost unpalatably tough...sliced it on the bias, thinly. I think it has something to do with it being grass-fed and/or flown all the way from New Zealand. Flavor was alright but way too tough.

      <content>The ones I've gotten have always been first rate tender. Very tasty too.

I've also had grass fed beef and it's been very tender. So I doubt it's that. Perhaps it was just a bad piece.
