Black bean soup! I make mine with onions, tomatoes, green peppers, cumin, and oregano with a spoonful of sour cream on top. Getting some ham in there would be great, but I often omit it. You could also just do black beans and white rice.
yucca with garlic
I would add mojo to the yucca. The citrus and garlic gives it a nice balance.
Black beans are also a staple. You could do yucca fries for a twist on traditional fries.
I'd love a green salad topped with chunky mango salsa.
Rather than tostones, opt for sweet maduros! Or is that double dessert?And second that black bean (soup) recommendation.
I like the salad idea-a "cuban" version with thinly sliced onions, tomatoes, herbs and avocado or coleslaw with mangos and lime dressing.
